Flour with strong, elastic gluten, ideal for dough that requires a short-medium fermentation time (approx. up to 24-36 hours).

Light, with a perfect rising, satisfy the best maestri pizzaiolo's needs. Ideal for high-hydration doughs, and recommended for Neapolitan classic pizza.
